The experience
What to expect
The class happens inland from Agadir, at a Berber house with a garden around it, away from the beach and the traffic. You start outside rather than in a kitchen: a walk through the garden to see what is growing, and to pick the herbs and vegetables that will go into the pot.
Then you cook. Tagine or couscous, depending on the day and what the garden is giving. The cook shows you how the spices go in, why the order matters and what the conical lid is actually doing. You do the work yourself, with someone standing next to you to correct you. Mint tea arrives somewhere in the middle, poured the long way from a height, which is harder than it looks.
The pot goes on the fire and you have the garden to yourself while it cooks. Then lunch, on a terrace, eating what you made, with fruit and tea to finish. The whole thing runs about four and a half hours, and we collect and return you from Agadir, Taghazout or Tamraght.

How your session runs
10:00 Hotel pickup
We collect you from your hotel in Agadir or Taghazout and drive inland to the house.
10:30 Garden walk and herb picking
A turn around the garden with the cook, naming what is growing and cutting the herbs and vegetables for the pot.
11:00 Mint tea
Tea poured from a height, the traditional way, and a chance to try it yourself before the cooking starts.
11:30 Into the kitchen
You make a tagine or a couscous from scratch, with the cook beside you explaining the spices and the order they go in.
12:00 Time in the garden
The pot goes on the fire and you have the garden to yourself while it cooks down.
13:15 Lunch
You sit down on the terrace and eat what you made, with seasonal fruit and mint tea.
14:00 The drive back
Back down to the coast after lunch, with the afternoon still ahead of you.
14:30 Hotel drop-off
We leave you at your hotel in Agadir or Taghazout.
